One last summer dish! Hurry!

Quick!  Before summer is over!  (Desert dwellers you can take your time.) Grilled shrimp & hatch peppers (or any pepper really) with mango papaya salsa (or any salsa really, lol)…on a soft warmed corn tortilla. Quick and simple.

And one more thing…since it’s Saturday… pair this with an Ojo Rojo (red eye.)  Our friend introduced us to this drink after his visit in Costa Rica.

Fill half the glass with beer, add a little Clamato tomato juice, a little spicy bloody mary mix, Tabasco, Worcestershire, squeeze of lemon and a stalk of celery.  It’s a bit of a salty drink, but oh so bueno.  Adios!
