Meatloaf makeover. It rocks.

Ten Things You Never Knew About Meat Loaf         No, not the legendary eccentric rock star…he’s just fine the way he is.  If you google “meatloaf,” this guy will pop up before the food!  But we love you Marvin Lee Aday!  That’s why i belted out “Paradise by the Dashboard Lights” with a complete stranger in front of a room full of people a few months ago.  Thanks to my older brother, i know all the lyrics.

 I”m talking about this of course.

There are a million ways to make over a meatloaf.  Here’s one of them.  Just a few little twist of ingredients on a favorite comfort food, makes this an easy, light, tasty meal.  I love this recipe b/c i can throw everything in one big mixing bowl and then in a loaf pan.  It’s from Cooking Light’s recipe makeovers.  They did a free form shape on a broiler pan, while i put it in a loaf pan and drained it after it came out of the oven.

It’s simple… unless you’re a vegetarian, in that case, it’ll be one of the hardest things you’ll ever have to do;)

    Sounds delicious. I’ll have to try it. I find meatloaf is one of those foods people either love or hate. Not too many inbetweens. Nice post!!

    I also believe we sang this at karaoke together as well, per your pick, and I knew none of the words 😉 this recipe looks delicious and I will probably be making it for dinner as well! Cheers to good healthy recipes that don’t sacrifice flavor to stay fit!
