Roasting Pumpkin Seeds

When you’re carving out your inner jack-o-lantern…

…don’t forget to roast the seeds!

Separate seeds from pulp.  Rinse. Dry well (so they crisp up nice in the oven.)  Toss with olive oil (about 2 Tbls for 1 large pumpkin) and sprinkle with a little salt.  Put them in a single layer on parchment paper and bake at 375 for 6-8 minutes.  You want them a nice golden brown, and crunchy.  Have fun! And they are so good for you, so eat up!
